Hey guys!!! how are you doing?  I am ok and... the weekend has already started, and... I am glad to be at home with my family, although I love to travel and gather with friends, dance, and eat out I enjoy most being at home, do you? baking, cooking, and then writing for you my recipes, it`s not as easy as it seems, but I love that you can make healthy choices through what I have been learning all these years.

Summer is almost done, let´s make these last days count, shall we?

I am trying to sharpen my skills with cassava flour 😁 Working with gluten-free flours it`s not easy at all but with time everything can be possible, and see what I did ...this small cake it`s ....... don`t have words to classify it 😍

A savory, fresh, tropical, and so juicy cake! that melts in your mouth with the explosion of the marriage of flavors:  mango into the cassava cake, and the honey-caramel peaches that make a perfect addition to it, not too sweet but with the right amount, and it is so damn good! my husband said that is like you eat light bread pudding.

Believe it or not, it was the only upside-down cake I have made, it had never occurred to me to do it before, but there is always a first time, and I am glad I did, will be there more recipes? I bet so because I am more confident right now, and who does not like a good slice of a healthy-tasteful cake?

Yes, guys, I know I am in love with cassava flour because it behaves almost the same as wheat flour, and it is 100% healthier than the wheat one that I called empty flour because it has been bleached industrially and has been taken away almost all the best nutrients, vitamins and minerals it has, but on the contrary, the cassava flour itself is all the root dried and grounded, is gut-friendly, paleo, whole30, AIP, grain-free, and gluten-free so nothing can overcome it right?

Based on my Cassava Orange Cake I did this one only I just varied a little bit the proportions of the ingredients, the possibilities are endless, I just wanted to make the caramel only with honey and ghee, andd...as you see I had excellent results, so everybody can do that easily.

Although I like yellow peaches a lot more, I chose the white ones to contrast with the mango on the cake but feel free to use whatever fruit you want to match the cake.

I made this lovely in a small 6-inch pan but you could do it in 2 pans doubling the recipe, into an 8-inches, or in cupcake tins as well.

There is nothing complicated about this recipe, measure the ingredients, and blend them, right? I really thought that the part of the caramel with the fresh fruit would be scary, but it was not at all.

UPSIDE-DOWN CASSAVA-MANGO CAKE WITH WHITE PEACHES

Baking Time: 30 min
Total Time: 40 min
The recipe makes 8 slices


Ingredients:

Cassava-Mango Cake (Update 11/11/2023)
  1. 3/4 cup cassava flour
  2. 1 medium sweet ripe mango peeled and cored
  3. 2 whole eggs
  4. 2 tbsp coconut yogurt or another
  5. 1/4 monk fruit or any other sweetener, or any sugar used in Paleo
  6. 1/4 cup avocado or coconut oil
  7. 1 full tbsp lemon juice
  8. 1/4 tsp salt
  9. 3/4 tsp baking powder
  10. 1/4 tsp baking soda
  11. 1/4 tsp ground ginger
  12. 1-2 fresh mint leaves (optional)
  13. 1 tsp vanilla
 Honey-Peaches  Honey Caramel:
  1. 2 1/2-3 peaches sliced (depends on the size of them)
  2. 1/2 cup honey 
  3. 4 tbsp ghee or butter
  4. 1/2 tsp vanilla 
How to make the Honey-Peaches Caramel?

Grease a 6-inch baking pan. Set aside.

Slice the peaches.

In a small pot add the ghee or butter at medium temperature, and let start to caramelize to a light-brown color.

Pour the honey on, and stir. It will start to bubble and caramelize, let it until it develops the right color. Retire immediately for the stovetop and stir in vanilla, be careful, it will do big bubbles from the contrast between the vanilla at room temperature and the heat of the caramel.

Pour into the baking pan, move it around, and the sides a little bit, but the peach slices in the way you most like it, but act quickly, the caramel will set in no time.

Set it aside to cool.

How to Make the Cassava-Mango Cake?

Preheat oven to 350 F. 

In a blender or food processor puree, the mango with the lemon juice, then add the eggs, yogurt, vanilla extract, and oil, scraping the sides as needed.

Add the sugar or sweetener, salt, baking powder, the fresh mint leaves if using them, and lastly, the cassava flour, blend all until a batter is made. Set aside for 10 minutes.

Pour the batter on the cooled caramel with peaches.

Bake for 25-30 minutes or until a toothpick in the center comes clean.

Transfer it to a cooling rack for about 30-45 minutes to cool down.

Put the serving plate on the top of the baking pan a flip it over to unmold it, it should be easy, but be careful, let the caramel drain over the white peaches with the help of a spoon.

Transfer it to a fridge for about 3-4 hours and enjoy it!

Notes:

Feel free to add more caramel if you like, only double the recipe.

Try to find a medium mango, if you have a large one double the recipe or eat a part of it because if you try to add all the large mango the dough will be like real mango pudding.
