The year is ending and we are trying to make it smooths sharing with family and friends, making wishes for the next one to be better, all we have expectations as life goes but also, we need to make something to help the mother nature helps us back, nothing falls from the sky without hard work, have arms wide-open to receive but have an open mind to give and help others, change what it's needed to grow as human beings, to learn everything that you can, to have a better future, to listen what others need, to say what we have to, to encourage family, friends, and co-workers and so on. Look it back only to change something wrong, fix it, and then see further and straight.

Let`s go straight to the recipe. Look at this plantain cake!  If someone had told me or I had imagined that I could have done it before, I would surely have become a millionaire in my home country ha, ha, but seriously, all these ingredients we have there, and they exist in lots of countries too, some of them have been making it for a long time with the different ingredients they have.

There are a lot of possibilities we can do with the things we have on our hands in every country poor or rich, just we have to reinvent the wheel and try new things to expand our taste horizons, it`s always easier to say I don`t know what to cook, or I am boring to do the same thing all single day, please, think, search and try, it`s what I do every day, changing the possible boring or repetitive food to become in something different, sometimes is not what I expected to see or taste, I am not a genius at all, but it`s the best way to eat clean and healthy with what we have, are you with me?

The important thing about this cake is that it's made with not quite ripe plantains, they can`t be green neither ripe, they have to be yellow on the skin but not soft internally, just in the middle between the two and it is what does possible for the bananas to release starches and to some extent be somewhat sweet without keeping all the starch that the greens have, allowing the cake does not be dry.

The best part is to take your blender or food processor, chop and put inside all the ingredients and in less time you have your cake baked and ready to put the frosting. I made the coconut butter the day before because I was too lazy to go to the market to buy it and I had at that time a package of dry unsweetened coconut flakes, but if you have the butter, stir well and you are ready to do it right away.

It has a delicious taste! 😋 it`s full of protein, resistant starches that become in probiotics that are good for our gut health, is gluten-free, sugar-free, has healthy fats, fibers, vitamins, and minerals, besides, it has lesser carbs than the store brought.

Baking Time:45 min
Total Time: 1:05 h
The recipe makes 6-8 slices




Ingredients

Cake:                                                                                                       
  1. 2 ripe plantains, peeled (not quite ripe)
  2. 1 cup of coconut butter
  3. 6 large eggs
  4. 6 tbsp coconut milk or another nut milk
  5. 1 tsp vanilla extract
  6. 1/4-1/2 tsp cinnamon
  7. 1/2 tsp baking soda
  8. 1/2 tsp baking powder
  9. 1/2 tsp sea salt
  10. 1/2 cup granulated monk fruit ( (can be replaced for another sweetener)
  11. 1 tbsp apple cider vinegar
  12. 1/3 cup coconut oil, ghee, or butter
Chocolate Frosting:
  1. 4 tbsp coconut butter
  2. the cream of 1 can o coconut milk, chilled 
  3. between 1/2 tsp to 1 tbsp stevia or another sweetener (to your liking)
  4. 4 tbsp cacao powder
  5. 1/2 tsp vanilla extract
Instructions:

Preheat oven to 350 F.

Grease an 8" spring pan and line the bottom.

In a food processor or a blender, chop the plantain, and add all the ingredients until smooth, scraping the sides as needed.

Pour batter into the pan.

Bake for about 35-45 minutes or until a toothpick in the center comes clean.

Cool in the pan, then take it to a wire rack to finish cooling completely.

In a bowl, put the chilled coconut cream, reserve the coconut water for another use. Beat it with vanilla and sugar, add slowly the cacao powder, add the coconut butter, beat it until it is thick and well mixed.

Place it on the cake, on the sides and edges,  chill until it`s set.

Slice it and enjoy it!

Notes: These plantains are not sweet enough because they are in the middle of the green and start to ripen, that`s why you will need a  sweetener.

If you want to have frosting in the middle, pass a knife lengthwise to cut it or bake in two individuals' pans but you will need double the frosting recipe explained above.

Do you want to try it before your taste buds say you do it again? I have you covered, grease a 6-inch pan, put parchment paper on the bottom, and cut the recipe in half.

You can change the frosting for another that you like most, even with vanilla frosting will be good or make it more simple melting chocolate chips with coconut oil to put on or you can eat it without frosting with a cup of coffee o tea mmm now we are talking 😄
