This way to make the burger it´s completely terrific!. We are used to eating them with cheese but combining, goat mozzarella cheese with basil and tomato pesto, slices of fresh tomato, and the taro root fritters as bread have become one of my family's favorite and fresh dishes at summertime! I died in love with it, seriously, it´s an explosion of savors.

I wanted to get a different alternative to make the burgers, as I did in this recipe, you might know that I love taro root!, but if you do not know, I'm telling you, and I preferred these taro fritters instead of adding another type of flour or another kind of bread, to get fewer carbs in this recipe and indulge my palate, but you can make 2 taro roots fritters for each burger as you normally do with bread or put a type of bread that you like.

In this post, I wrote about how to make the taro root fritters, and the nutritional facts of this root for healthy eating,  you can see how easy they are to do and are exquisite.

I saw that is a crime to use the basil pesto instead of the leaves for the Caprese salad, I think both are good options, but if you make your own pesto, this would improve the results.

CAPRESE BURGERS WITH TARO ROOT FRITTERS (Paleo, Keto, Gluten-free, Nut-Free)

This recipe is for 3 persons, but you can make the quantity that you want



Ingredients:
  1. 3 burgers (bought or made by yourself, preferably grass-fed)
  2. 6 oz mozzarella goat cheese sliced in 6 (any vegan mozzarella cheese will work)
  3. 3-4 tablespoons of nut-free basil pesto
  4. 3 teaspoons of nut-free tomato pesto
  5. 1 large onion sliced
  6. 1 large fresh tomato or 2 medium cuts in equal slices
  7. 3 bigs taro root fritters (malanga)
  8. 1/2 cup of avocado oil, coconut oil or olive oil for frying
  9. fresh basil leaves to decorate (optional)
  10. Coconut, avocado, or olive oil for frying the taro fritters
Instructions:

Cook or grill the burgers as you normally do. Set aside

Slice the tomato. Set aside.

Into a skillet add 2 tablespoons of oil at a medium-low temperature and cook the onion until they are soft, put the slices on each burger.

Then, fry the taro root fritters, you will need to add more quantity, about 2 full tablespoons of the dough to cover the burger.

 Let them rest on a paper towel to absorb the grease, while you are assembling the burger.

Assembling: 

On the plates, take each taro root fritter,  then add a slice of tomato and spread on 1 teaspoon of basil pesto, then one slice of the mozzarella cheese.

Over a slice of tomato and repeat the pesto and on the top of each a teaspoon of tomato pesto.

Take them to the grill, skillet with lid or oven for a few minutes until the cheese melts.

Enjoy with salad, baked potatoes or sweet potatoes, and freshly squeezed lemon juice! Happy summer!
