In my house, there is a culture to make food daily, also we always have 1 or 2 desserts in a simple week, my mom was used to make 2 desserts on the same day. Today the life is more rapid and complicated, and we really don´t have time to do those things regularly, but the truth is that when I haven´t done a dessert in a week, my family says to me: hey mom, is there something sweet? 😔 We are chocoalcoholics, but my family is divided into milk chocolate and dark chocolate. I go always for the dark, the more I have, the more I like it, and I do not like it too sweet.

Getting to the point, about this recipe, I have found it on the Nu Naturals website, I did not have all the ingredients it calls for, that´s why I changed some of them. This cake is small, but I wanted to see if it worked or not first, then I will upgrade it and let you know.


Actually, it is a very good and healthy option for all the family, full of nutritious ingredients, fiber, good fats, proteins, resistant starch that the plantain has, gluten-free, sugar-free, paleo, AIP,  and Whole 30.

The texture is similar to a cheesecake, it´s rich and does not have a taste of plantain at all. Try it and let me know.                          

What is Resistant Starch?

It is a complex carbohydrate, is the soluble fiber and the starch that is not digested in the small intestine but it passes through the large bowel, this means that all those starches don´t break down in the stomach neither absorbed, this part of the starch is fermented by the intestinal bacterias and becomes a short chain of fatty acids, which improves our health:  it nourishes intestinal flora, reduces appetite because you feel full longer, does not increase the insulin in the blood, acts as probiotic, regulates the digestion and metabolic system in general.

Preparation Time 5-7 min
Baking Time: 30 min

Total Time: 35 min
The recipe makes around 4-6 servings


Ingredients:                                                                             
  1. 3 large eggs or 4 medium
  2. 1/2 cup of ghee, or: virgin coconut oil,  grass-fed butter
  3. 1 large plantain (not very mature)
  4. 1 teaspoon of vanilla extract
  5. 2 tablespoons of coconut milk or almond milk
  6. 1 teaspoon apple cider vinegar
  7. 1/2-1 teaspoon of white stevia powder or other sweeteners you like
  8. 1/2 cup of cocoa powder or carob powder
  9. 2 tablespoons of coconut flour
  10. 1/4 teaspoon of ground  cinnamon
  11. 1/4 teaspoon of turmeric
  12. A pinch of salt.

Instructions:


Pre-heat oven to 350 F.

Blend all the ingredients together in a food processor or blender.

Grease a 6-inch pan.

Pour the batter into the pan.         

Bake between 20-30 minutes or until a toothpick comes clean.

Cool, but the frost that you like it and enjoy!.

Instructions for the Frosting:
  1. 2 full tablespoons of grass-fed butter or virgin coconut oil
  2. 6 full tablespoons of cacao powder
  3. 2 teaspoons of vanilla  extract
  4. 2 teaspoons of white stevia powder or other sweeteners you like 
  5. 1/4 teaspoon of ground cinnamon
  6. 1/4-3/4 cup of milk of your choice (coconut, almond, cashew)
Instructions:

In a pot, throw the butter, cacao powder, cinnamon, and stevia powder to medium-low temperature and stir until dissolved.  Pour a little by little of the milk, until you have reached the desired consistency, not watered but not very thick, with consistency. Warm but don´t let it be hot or bubbling. 

Taste it, if you want sweeter put more stevia in it.

Add vanilla extract and stir.

When the cake is cooled, cut in a half, at the bottom, put a part of the frosting, and distribute evenly.

Spread the other part of the frosting on the top and sides of the cake, distributing, making figures whit a fork, or you can leave it smooth if you want.

Take it to the fridge for about 1-2 hours to make it firm.

Note: I will post another recipe similar to this one, I want to change some ingredients, and add others to see how they work together.
